Gingerbread Cookies Recipe

Gingerbread man/ cookies are always being highlighted during the festive seasons, especially during Christmas. They do not only comes in human shaped biscuits, but also other Christmas related shapes such as snowman ⛄️,star ⭐️, bell 🔔 and etc. 

This is also the cookies that I always bake during this season to giveaway to friends and also serving it to my visitors. Gingerbread man was the shape that I loved making as I can play around by decorating it with colorful icings and my favorite confectionary which attracted most kids.

However as time passed, kids grown up and also being more health conscious myself, I decided not to do any decorations on the gingerbread cookies this year. Besides, I wanted to do something different to my cookie gifts this year. Instead of just giving away gingerbread man, I am giving away assorted biscuits in a tin which was inspired by the butter cookie/ shortbread tins that are usually available in the supermarket during Christmas. Therefore I used the star shaped cookie cutter this time. 

Using the same recipe, it can be make into gingerbread houses too! All you need is to prepare the template using a cardboard or paper in order for you to cut the cookies into the desirable shapes using them. I have been wanting to make a gingerbread house as a decoration like photo shown below (gingerbread house decoration at one of the hotel in Auckland during last year’s Christmas), but never have a chance yet as I always run out of time. I will need a better planning next year to make the gingerbread house.

INGREDIENTS 

60g butter, softened
1/3 cup soft brown sugar
1/4 cup golden syrup
1 egg

1 1/2 cup all purpose flour
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp ground cinnamon
1/4 tsp ground all spice
1/2 tbsp ground ginger 

1. Sift all purpose flour, baking powder, baking soda, salt, ground cinnamon, ground all spice and ground ginger into a bowl. Mix well set aside.

2. Cream butter, soft brown sugar and golden syrup until light and fluffy.

3. Add in egg, and mix until well incorporated.

4. Add in the flour mixture, and mix well.

5. Transfer the dough to a cling wrap, and flatten it to a disc shape. Wrap it up and chill the dough in the fridge for at least 2 hours.

* Although the dough will still be soft even after chilled, it makes the dough easier to handle. The cutting will also be cleaner and tidier too.

6. Roll the dough to about 0.5 cm thick.

7. Lightly flour the cookie cutter, and cut the dough using the cookie cutter.

8. Arrange the cut cookie dough onto a baking tray lined with non stick parchment paper.

9. Bake it in a preheated oven of 175 degree Celsius for 15 – 20 minutes or until the edges are slightly brown. Cool it in the tray for 5 minutes before removing it to cooling rack to cool completely.

* If you are interested to decorate your cookies, allow the cookies to cool completely before decorating them. 

* Royal icing can be made by whisking 1 1/2 tbsp meringue powder, 2 cups icing sugar and some water until it becomes peak.

*You can decorates it with fondant too.
