Soboro Donburi Recipe

Will you be busy in the coming weeks and finding it difficult to cook dinner at home? I have a very simple recipe that uses 3 different main ingredients that make up to a bowl of dinner that consists of vegetable, meat, egg and rice which will fill up your tummy in the easiest way. It is also a kid friendly meal. All these can be done in less or about 30 minutes. Are you curious by now?

As shown in the photo above, this is the bowl of dinner that I am talking about, the soboro don. Don or donburi in Japanese cuisine means the food is served in a deep/ big bowl with rice at the bottom. Both can be used interchangeably as don is the short form of donburi. Soboro don served in Japanese restaurant usually comes with minced meat and egg only, while the Japanese mums added another extra ingredient while making it at home, which is green vegetables, to it to make it looks more appetising, colourful and healthier too.

It does not only makes a nice and simple meal at home, it can be made into lunch boxes too!

In this recipe, I am using minced pork for my choice of meat. There is no rules as to what choice of minced meat that you can used in making soboro don, therefore do feel free to substitute the minced pork with minced chicken or minced beef. And if you are interested to make it vegan, substitute the minced pork with okara or finely chopped firm tofu. As for the vegetables, I am using asparagus as they are currently in season here in NZ. The other type of vegetables that are commonly used are the round beans or green peas. So, again use your preferred vegetable choice.

To make this soboro don, it is important to cook and make all the ingredients used are made into the smallest form as this dish is suppose to resembles the furikake (Japanese dried rice seasonings) which is used to sprinkle over steam rice as seasonings for a simple and quick meal. And lastly the flavours of this dish has a nice combinations of sweetness and saltiness. However, the sweetness will be more dominant making the meal a very appetising ones.

INGREDIENTS 
Serves 2

100g minced pork/ chicken/ beef/ tofu
1 tbsp light soy sauce
1 tsp mirin (Japanese sweet cooking sake)
1 tsp sake
1 tsp sugar

2 eggs
1/8 tsp salt
1/2 tbsp sugar

100g asparagus/ round beans
1/4 tsp salt

2 bowls cooked rice

1. Beat the eggs with sugar and salt until well incorporated.

2. Mix sake, sugar and light soy sauce in a small bowl. Set aside.

3. Prepare the vegetable of your choice, and cut it into about 1″ length or smaller.

4. Heat up the pan with some cooking oil, add in the egg mixtures. Cook it into scrambled eggs. Remove and set aside.

5. Heat up the pan with some cooking oil, add in the minced pork. Stir fry it for 1 minute, then add in the seasoning sauce mixed earlier. At the same time, break up the clumps with spatula. Continue to stir fry until the minced pork are totally cooked and well coated with the seasoning sauce. Remove and set aside.

6. Heat up the pan with some cooking oil, add in the asparagus. Stir fry for 1 minute, and season it with salt. Continue to stir fry for another 2 minutes or until it is cooked. Remove and set aside.

7. To assemble the donburi, layer the bottom of a bowl with cooked rice into a bowl. Then top half portion of the egg to 1/3 side of the rice. Continue the same with minced pork and green vegetables. Serve it immediately.
