Varlhona Marble Pound Cake Recipe

INGREDIENTS
(Makes 9 x 5″ loaf pan)

180g unsalted butter
1 cup sugar
4 eggs
1 tsp vanilla bean paste

2 cups plain flour
1 1/4 tsp baking powder
1/4 tsp salt
150g sour cream
120g Varlhona 62% dark chocolate

STEPS

1. Using a mixer, beat butter and sugar until light and fluffy.

*Make sure the butter is at room temperature

2. Add in one egg at a time, beating well after each addition. Followed by vanilla paste.

*Eggs to be in room temperature too.

3. Sift flour, baking powder and salt into a separate bowl.

4. Add 1/3 portion of the flour into the butter mixture and mix well. Followed by 1/2 portion of the sour cream.

5. Repeat step 4 for another time, and lastly add in the balance of flour mixture. Mix well and set aside.

6. Bring a pot of water to simmer.

7. Melt chocolate in a metal/ glass bowl, placed over a pot of simmering water. Allow the chocolate to cool for about 5 minutes.

8. Mix half of the batter into the melted chocolate and mix well.

9. Grease the loaf pan with butter.

10. Then dust it with flour, tapping out any excess.

11. Dollops alternate spoonfuls of chocolate and vanilla batter into the loaf pan. Lightly tap the pan.

12. Use a knife to swirl the batter. And lightly tap the pan again.

13. Bake the cake in a preheated oven of 160 degree Celcius for 60 – 70 minutes, or until the tester skewer comes out clean.

14. Cool the cake for 30 minutes in the pan before removing out to cool completely.

Once the cake has cool down completely, slice it and enjoy with a cup of tea or coffee.
